Chocolate Peanut Butter Rice Crispy Cookies

This is one of my favourite healthier cookie recipes, very low sugar. A bit higher in your healthier fats, to be ate in moderation 😉

Chocolate Peanut Butter Rice Crispy Cookies

Ingredients

1/2 Cup of Coconut Oil

1 Cup of Natural Peanut Butter

3/4 Cup of Vitafiber or honey

2 1/2 Cups of Crispy Rice (Nature’s Path)

6 tbsp. Unsweetened Cocoa

2 tsp. of Vanilla

OPTIONAL: 1/2 Cup of unsweetened shredded coconut

Instructions:

On Stove top, on low melt together Coconut Oil, Peanut butter, Vitafiber or honey until its all smooth. Stir in Vanilla & Cocoa. Take off stove top, stir in crispy rice and unsweetened coconut. You want to have a good consistency to make cookies. Add more crispy rice if not thick enough. You can also use Oats instead of the crispy rice if you prefer.

Drop onto cookie sheet, place in refrigerator. Let cool before eating. Makes about 30 cookies
